Lamb and Harissa Pie

  • 1 tbs ras el hanout (Moroccan spice mix)
  • 1 tsp sumac, plus extra
  • 3 tsp dried mint
  • ¼ cup (35g) plain flour
  • 1 ½ cups (375ml) beef stock
  • 2 frozen shortcrust pastry sheets, partially thawed, cut in half diagonally
  • 2 frozen puff pastry sheets, partially thawed, cut in half diagonally
  • 1 egg, lightly beaten
