Creamy Tortellini Soup with Italian Sausage

Ingredients
  • 1.25 pounds ground Italian sausage (Can use spicy - if in casing, take out and crumble) - or can sub Jimmy dean spicy sausage
  • (can sub chopped cooked chicken but add more spices)
  • 1 small white onion, peeled and diced
  • 2 large carrots, peeled and diced (or use matchstick pre cut)
  • 4 garlic cloves, minced
  • ΒΌ cup white-whole wheat flour (or all-purpose flour)
  • 6 cups chicken stock
  • 2 (10-ounce) package refrigerated cheese tortellini
  • 5 ounces greens of your choice (I used a mixture of spinach, collards and baby kale)
  • or 2 cups packed baby spinach or frozen spinach
  • 1 to 2 cups milk or cream or half/half (*see recommendations below)
  • salt and pepper

  • Opt: sprinkle of basil, italian seasonings, cracked red pepper flakes
  • Opt add ins: diced red bell pepper and/or celery, can of cannellini beans, chopped mushrooms, can of diced tomatoes/Rotel
