Ingredients
  • ½ red onion, finely chopped
  • ⅓ cup apple cider vinegar
  • ⅓ cup sugar
  • ⅓ cup golden raisins
  • 1 tablespoon finely grated fresh ginger
  • Kosher salt
  • 2 cups fresh blueberries
Steps
  1. Combine the red onion, vinegar, sugar, raisins, ginger and ½ teaspoon salt in a saucepan over medium heat, stirring to dissolve the sugar.
  2. Add the blueberries, return to a simmer and cook until syrupy, 10 to 12 minutes.
