Chicken, Broccoli & Rice Casserole

Ingredients
  • 1 lb - Cooked Chicken (can use Rotisserie Chicken - deboned and chopped)
  • 4 c - Fresh Broccoli (about 1 small head) chopped (or frozen bag of broccoli)
  • 2 - Green Onions - chopped
  • 1 can - Cream of Mushroom Soup
  • 1 can - Cream of Chicken Soup
  • 1 to 2 c - Shredded Cheese
  • 2 c - Minute Rice
  • Salt & Pepper
  • Garlic Salt - to taste

  • ¼ cup Panko Bread Crumbs (I like Italian Flavored)
Steps
  1. Pre-heat oven to 400° and spray 13x9 baking dish with Pam
  2. Cook Rice per package instructions and prepare chicken
  3. Steam broccoli and onion 2.5 to 3 minutes
  4. Mix everything together (saving some cheese) and pour into baking dish. Top with saved cheese.
  5. If desired, sprinkle Panko on top for a crunchier topping
  6. Bake 20 to 30 minutes - until heated through and cheese is melted/bubbly
  7. ** Can you 2 smaller dishes and freeze half before baking. To make, defrost and bake 30 to 45 minutes - until heated through
