Beef Bourguignon in the Instant Pot

  • 2 pounds beef chuck cubed into 1.5 to 2 inch pieces

  • 1 pound (16 ounces) Yukon gold potatoes quartered
  • 1 ½ cups beef broth
  • 1 ½ cups dry red wine Pinot Noir works best
  • 1 medium yellow onion chopped
  • 1 cup sliced baby bella mushrooms
  • 3 large carrots peeled and cut into 1-inch pieces
  • 2 tablespoons tomato paste
  • 2 garlic cloves minced
  • 3 tablespoons unsalted butter divided
  • 2 tablespoons all purpose flour regular or gluten-free
  • 5 to 6 sprigs fresh thyme
  • 2 bay leaves
  • Salt and pepper to taste
