Banana bread
Ingredients
  • ½ Cup Vegetable Oil
  • 1 Cup Sugar
  • 2 large eggs
  • 3 medium bananas
  • 1 cup buttermilk
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract
  • 2 ½ cups flour
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • ½ cup chopped pecans

Steps
  1. Preheat oven to 325
  2. Spray two loaf pans with vegetable spray.
  3. Cream together oil, sugar and eggs on medium speed for 3 minutes using an electric mixer.   In a blender puree the bananas with the buttermilk.  Add the oil mixture along with the cinnamon and vanilla.  Stir together the flour, baking soda, baking powder and salt.  Gradually stir the flour mixture into the batter.  Mix until smooth.
  4. Pour the batter evenly into the loaf pan, putting chopped nuts on the loafs.  Bake until  a toothpick inserted in the center comes out clean about 45 to 60 minutes.  Remove from the oven.  Cool in the pans 15 mins.  Invert onto cooling racks to cool completely.
