Vegan Rojak (Malaysian Satay)
Ingredients
  • Satay Sauce   (serves 10)
  • 1 tbs Vegetable Oil
  • 3 Cloves Garlic, minced
  • Thumb-sized Piece Ginger, minced
  • 1 Onion, finely chopped
  • 1 Lemon Grass Stem, bashed / 1 tbs Lemon Grass Paste
  • 1 & ½ cups/200g Roasted Peanuts, chopped fine
  • 1 tsp Ground Turmeric
  • 1 tsp Mild Chilli Powder
  • 2 cups/500ml Water or Vegetable Stock
  • 2 Nori Sheets, blitzed fine
  • 1 tbs Gochujang (Korean Chilli Paste)
  • 1 tbs Sriracha Paste
  • 1 tbs Tomato Puree
  • 2 tbs Peanut Butter
  • 1 tsp Sea Salt
  • 2 tbs Coconut Sugar
  • 1 tbs Soy Sauce
  • ½ cup/125ml Coconut Milk
  • Carbohydrate
