Pasta with Zucchini, Red Bell Pepper, Tomatoes, and Feta Cheese
Ingredients
  • 1 tablespoon oil
  • ½ onion finely diced, optional
  • 3 cloves garlic, finely chopped
  • 1 medium or 2 small zucchini, sliced longways and cut into ½ cm pieces
  • 1 red capsicum, cut into ½ cm strips
  • 1 heaped teaspoon Italian herbs
  • pinch of chilli flakes
  • 3 medium tomatoes or 1 can diced or cherry tomatoes
  • 50 to 100g feta cheese
  • 2 to 3 large handfuls of baby spinach, optional
  • ½ bag spiral or pasta of choice
  • salt and black pepper to taste
  • Optional to finish: fresh herbs - basil or thyme
