Ingredients
  • 4c veggie broth or mushroom stock
  • 2T miso
  • 4 mushrooms sliced thin
  • 3 green onions sliced thin
  • 1 hand full of baby spinach
  • 1 portion of rice noodles (cooked, drained, and rinsed)
  • Bring broth to a boil. Add veggies and cook 1 min.  Remove from heat and whisk in miso.
  • serve hot.
  • Add noodles to a large bowl, and ladle the soup over.
