Tuscan White Bean and Chicken Soup

Ingredients
  • 1 can northern beans, no salt added (or drained and rinsed if unable to find low salt)
  • 1 can no salt added petite tomatoes
  • ½ sweet or yellow onion
  • 1 celery stalk, sliced
  • 1 lg carrot, halved and sliced
  • 1 tsp minced garlic
  • 1 tsp Italian seasoning
  • ¼ tsp sea salt
  • ¼ tsp black pepper
  • 4 cups low sodium vegetable stock
  • 6 chicken tenders or 1 lg beast
  • 2 T parsley
Steps
  1. Place all ingredients in crock pot or slow cooker.
  2. Cook on low for 8 hours.
  3. Divide into 5 servings and enjoy!
  4. Can serve with dollop of fat free Greek yogurt, cheese and/or greeen onion.
