Breakfast Pizza Frittata

Ingredients
  • 12  Large White Eggs
  • 112 g Shredded Cheddar
  • 28 g Quest Multipurpose Protein Powder
  • 2 Breakfast Turkey Patty microwaved & diced
  • 142 g Baby Spinach Leaves sauteed til wilted
  • ½ cup Half-and-half
  • 6 Tbsp Egg Substitute
  • 6 slices Fully Cooked Bacon pan fried until crispy & crumbled
  • ½ container Baby Portobello Mushrooms
  • 4 oz Tri Pepper Mix (Any diced bell peppers work)
  • 2 TB Olive Oil for Sauteing
  • Salt & Pepper to taste
Steps
  1. Preheat oven to 350 degrees
  2. Heat cast iron skillet to medium and add ½ TB olive oil
  3. Saute Peppers & Mushrooms until preferred texture for pizza
  4. Set aside in bowl
  5. Microwave sausage & dice
  6. Cook bacon in skillet to well done
  7. Take out, crumble and set aside
  8. Toss pre-cooked and diced sausage in skillet for a few mins to brown it
  9. Take out and set aside
  10. Add 1TB Olive Oil to skillet
  11. Saute Baby Spinach until just wilted
  12. Take out and set aside
  13. Mix eggs, half&half, spinach, protein powder, salt and pepper together with an immersion blender or in a food processor/blender and add to skillet.
  14. Cook for about 6 minutes until the sides start to set up
  15. Add to oven and bake for 15 minutes
  16. Take out and pop with a fork all over to reduce the fluffiness
  17. Add shredded cheddar
  18. Top with sausage, bacon, mushrooms, peppers
  19. Sprinkle mozzarella cheese over toppings
  20. Set under broiler for 2 to 3 minutes until cheese is bubbly
  21. Let sit for 5 minutes
  22. Serve
