Roasted Butternut Squash Soup
Ingredients
  • 4 cups (1-inch) cubed peeled butternut squash (about 1 ½ pounds)
  • Option: you can buy 2 packages already chopped, usually found in the produce section.
  • ¼ teaspoon salt
  • 4 large shallots, peeled and halved
  • 1 (½-inch) piece peeled fresh ginger, thinly sliced or 1 teaspoon ground
  • 2 -½ cups low sodium vegetable broth
  • 1 cup lite coconut milk
  • 2 tablespoons (1-inch) slices fresh chives
  • Cracked black pepper (optional)
