Sweet Potato, Squash, & Black Bean Enchiladas

  • 1 medium yellow squash, grated on your box grater (about 1 cup)
  • 1 teaspoon chili powder
  • 2 cloves garlic, minced
  • 1½ cups cooked black beans**
  • 1 teaspoon maple syrup or agave syrup
  • A pack of corn or flour tortillas
  • Sliced avocado
  • Chopped fresh cilantro
  • ½ teaspoon ground cumin
  • ½ teaspoon salt
