Low Fodmap Creamy Ham and Potato Soup
Ingredients
  • 195 g (1 ½ cup)   shaved ham (we used leftover Christmas ham)*
  • 80 g (1 cup)   leek (green leaves only, finely chopped)*
  • 800 g   potatoes (peeled & chopped in small chunks)
  • 240 g (2 large)   carrots (peeled & diced)
  • 2 tbsp   butter or dairy free spread*
  • 1 tbsp   garlic infused oil*
  • 2 tbsp   gluten free all purpose flour*
  • 625 ml (2 ½ cup)   low FODMAP chicken stock*
  • 375 ml (1 ½ cup)   low FODMAP milk*
  • 6 tbsp   sweet corn kernels (frozen or fresh)
  • 1 tsp   dried chives*
  • Season with   salt & pepper
  • 2 tsp   fresh parsley (finely chopped, optional)
