Apple and Walnut Crumble

Ingredients
  • 100g walnuts
  • 1.25kg apples, peeled, cored, and sliced
  • 50 to 100g sugar
  • 1 tsp cinnamon
  • 225g plain flour
  • pinch of sea salt
  • 200g cold unsalted butter, cubed
  • 150g sugar, granulated or light brown sugar
  • 75g oatmeal
  • 75g ground almonds
Steps
  1. 1. Toast walnuts on a baking sheet in oven at 180 C for 5 to 7 mins.
  2. 2. Let cool, then chop.
  3. 3. Sift flour and salt into a bowl.
  4. 4. Add butter and rub in until mixture resembles coarse crumbs.
  5. 5. Stir in sugar, oatmeal and ground almonds.
  6. 6. Put apples in a bowl, sprinkle with the remaining sugar.
  7. 7. Add walnuts and cinnamon and mix.
  8. 8. Spread in a pie dish.
  9. 9. Scatter crumble over apples in an even layer and bake for 40 to 45 mins until browned on top.
Notes
  • Works well with strawberries and rhubarb compote (sugar, lemon juice)
