Rice Paper Bacon (vegan)

Ingredients
  • Two sheets of rice paper
  • 1 cup hot water
  • 1 tsp liquid smoke
  • 2 tbs soy sauce
  • 2 tbs nutritional yeast
  • 1 tsp sugar
Steps
  1. Mix everything except the rice paper and hot water in a bowl. Stir until the sugar is dissolved.
  2. Place the hot water into a skillet large enough to hold the whole sheet of rice paper flat.
  3. Dip sheet of rice paper into hot (not boiling) water for about 5 seconds, just long enough so you can cut it with scissors without it cracking.
  4. Using scissors, cut rice paper sheet into strips about 2" wide.
  5. If needed, put the strips one at a time into the hot (not boiling) water until they are just soft enough to bend without cracking, maybe 10 more seconds.
  6. Pull each strip out and wipe off the water with your fingers.
  7. Dip the wet rice paper strips one at a time in the marinade.
  8. Place strips on silicone lined baking sheet. Lay them flat, but it's ok if the edges fold over a little bit.
  9. Bake 10 minutes at 350F.
  10. Use a spatula to peel the strips off of the pan, turn and pinch them a little on the edges to make them "wrinkly".
  11. Bake five minutes more.
  12. Place strips on a rack to cool.
