Carin's Sherry Apple Pork Crockpot
Carin's Crockpot Version
Ingredients

  • Apple Sherry Crockpot Pork or Chicken- This is SO good!
  •  
  • Peel and dice 1 sweet potato and some butternut squash. Put in sprayed crockpot.
  •  
  • Put pork roast, chop or tenderloin or boneless skinless chicken breasts or thighs on top of sweet potatoes. Sprinkle with garlic or kosher salt and pepper. I sprinkle with a little ground red pepper for a little kick.

  • Top with diced sweet onion and celery. Top with sliced, peeled Granny Smith apples. Sprinkle with cinnamon and a little nutmeg.

  • Mix ¼ to ½ cup sherry with ¼ to ½ cup fat free broth.  Depending on how much liquid you need. Most times I just use 1 cup Fairbanks brand cream sherry.

  • Cook till sweet potatoes are soft and meat starts to shred. Meat is done when you can twist it with a fork.
  •  
  • Mix a tablespoon of cornstarch with a little liquid and add the last 30 minutes with slow cooker on high to help thicken sauce.  Enjoy.
