Geri's Veggie Wrap with Basil Pesto Aioli
Ingredients

  • Green Bell Peppers
  • Red Onions
  • Carrots
  • Cucumber
  • Spinach flatbreads

  • subheading: Basil Pesto Aioli:
  • 1 cup mayonnaise
  • 3 Tbsp. prepared pesto
  • 1 Tbsp. lemon juice
  • 1 clove garlic, finely grated
Steps
  1. Make the Aioli - Add all ingredients to bowl, whisk to combine. Season to taste with salt and more pesto if needed, set aside.
  2. Cut the veggies lengthwise
  3. Arrange veggies in flatbread.
  4. Drizzle veggies with aioli, then fold flatbread tightly.
  5. Cut in half and serve
Notes
  • Store aioli in fridge for up to 2 weeks.
