Easy and Healthy Beef Taco Salad
Ingredients
  • 2 tbsp olive oil
  • 1 pound ground beef I used 90% lean
  • 2 tbsp low-sodium taco seasoning
  • ¼ cup bone broth or water
  • 4 cups romaine lettuce
  • 2 cups cherry tomatoes halved
  • ½ medium red onion thinly sliced
  • 1 medium ripe avocado peeled and diced
  • 1 cup Low-fat Mexican shredded cheese blend
  • ¾ cup corn I used frozen, fresh may be substituted
  • ¾ cup canned black beans drained and rinsed
  • Optional: 1 cup corn tortilla chips crushed
  • subheading: Creamy Dressing:
  • ⅔ cup plain Greek yogurt
  • 1 Tbsp extra virgin olive oil
  • juice & zest of 1 lime
  • ¼ cup fresh cilantro leaves finely minced
  • ⅔ teaspoon kosher salt or to taste
  • ⅓ teaspoon ground pepper or to taste
