Ingredients
  • 4 Tbsp salted butter
  • 6 sweet onions, halved and sliced
  • 2 garlic cloves, minced
  • 2 bay leaves
  • 2 tsp thyme
  • ½ tsp sugar
  • ½ tsp salt
  • ¼ tsp ground blackpepper
  • ½ c dry white wine (Chardonnay, Pinot Grigio, or Sauvignon Blanc)
  • 3 Tbsp unbleached all-purpose flour
  • 8 c beef broth* (we prefer low sodium)
  • 2 Tbsp brandy (optional)
  • Salt and pepper (to taste)
  • 1 baguette, sliced 1” thick
  • 1 c grated Gruyere cheese or Swiss cheese
