Servings: 2 big bowls or 4 small bowls
Ingredients
  • 2.5 cups pre soaked, cooked black beans
  •  
  • 5 cups water
  •  
  • 5 Heirloom carrots
  •  
  • 1 red onion chopped
  •  
  • 4 cloves garlic chopped
  •  
  • 1 cup cilantro chopped
  •  
  • 1 tbsp fresh thyme
  •  
  • ½ tbsp oregano
  •  
  • ¼tsp salt
Steps
  1. Boil beans till tender
  2. Add carrot and any other veggie that needs a while to cook
  3. Add everything else and simmer till tender. Salt to taste.
Notes
  • you can sub out the black beans for another veggie like potatoes or squash.
