  • 10 garlic cloves
  • 1 (2-inch) piece ginger, peeled and quartered
  • 4 tablespoons apple cider vinegar, plus more as needed
  • 8 chicken drumsticks (about 2¼ pounds), skins removed (see Tip)
  • Kosher salt (such as Diamond Crystal)
  • 1 teaspoon ground turmeric
  • ¼ cup grapeseed or vegetable oil
  • 2 medium yellow onions, finely chopped
  • 2 tablespoons tomato paste (optional)
  • 1 teaspoon granulated sugar, plus more as needed
