Creamy Pumpkin Pasta (Vegan)
Ingredients

  • 1 large yellow onion, chopped
  • 5 leaves of fresh sage, minced
  • 1 15 ounce can of pumpkin purée
  • 16 ounce package of silken tofu
  • ½ cup of vegetable broth
  • 1 cup of plant-based milk
  • 1 teaspoon of Italian seasoning
  • ½ teaspoon of cumin
  • ½ teaspoon of paprika
  • Salt/pepper to taste
  • 1 pound of pasta
  • Fresh parsley, chopped for garnish
