I started out coating tofu with wild rice and that turned out so well I decided to try air frying rice. It worked out great.

Ingredients
  • Aztec Blend (Ancient amaranth grains combined with red rice, whole grain brown rice and multi-colored peas)
  • red beans
  • salt substitute
  • ground pepper
  • maple syrup
Steps
  1. Mix rice and beans and refrigerate overnight, so it absorbs any remaining water.
  2. Ladle the rice onto the air fryer screen basket. You could put baking paper down but then it wouldn't dry from both sides.
  3. Cook for 15 minutes. I pushed the crunchy tops to the side and cooked another 5 mins.
  4. Serve on plate and season with salt substitute and pepper or maple syrup. Try other flavors.
Notes
  • This would be a nice crumble on top of nice cream or smoothie.
