Ingredients
  • 6 large eggs
  • 2 cups sugar
  • 1 cup dark brown sugar
  • 2 cups vegetable oil
  • 3 ¾ cups all-purpose flour
  • 3 teaspoons baking soda
  • 3 teaspoons baking powder
  • 3 teaspoons ground cinnamon
  • 1 ½ teaspoon ground cloves
  • 1 ½ teaspoon ground allspice in
  • 1 ½ teaspoon ground ginger
  • ¾ teaspoon ground nutmeg
  • 1 ½ teaspoon salt
  • 3 cups finely shredded carrots
  • 3 cups finely shredded zucchini
  •  
  • Additions (choose your own adventure)
  • 1 ½ cup coarsely chopped pecans or walnuts
  • 1 ½ cups variety of plumped raisins (I set mine in warm water for a couple of hours, then drain)
