  • 2 cups/225 grams fresh or thawed frozen cranberries
  • ¾ cup/150 grams sugar
  • ½ cup/125 grams fresh orange juice
  • 1 tablespoon orange zest

  • 4 large egg whites
  • ¾ cup/150 grams sugar
  • ½ teaspoon kosher salt (such as Diamond Crystal) or ¼ teaspoon fine salt
