Baked Ziti & Summer Veggies
Ingredients
  • 4 oz uncooked ziti pasta
  • 1 Tbsp olive oil
  • 2 c chopped yellow squash
  • 1 c chopped zucchini
  • ½ c chopped onion
  • 2 clove garlic, minced
  • 2 c chopped tomato
  • 1 c part-skim mozzarella cheese, divided
  • 2 Tbsp chopped fresh basil (can sub dried)
  • 2 tsp chopped fresh oregano (can sub dried)
  • ¾ tsp salt, divided
  • ½ tsp black pepper
  • ⅛ tsp crushed red pepper (i left this out because of my kids)
  • ½ c part-skim ricotta cheese
  • 1 lg egg, slightly beaten
