Ingredients
  • Barb Jurczyk-Millions Chicken Parmesan
  • 4 chicken breasts (thin sliced) 2 tsp. dried oregano
  • 4 tbsp. of olive oil plus extra for frying 1 tsp. Paprika
  • 4 tsp. minced garlic salt and pepper to taste
  • 1 egg beaten ¼ cup flour
  • ¾ cup seasoned Italian bread crumbs
  • ¼ cup flour ½ cup shredded parmesan
  • 1 cup mozza cheese grated 1 tsp. paprika
  • ¼ cup milk
  • 1 jar marinara sauce
  • Dip chicken in milk/egg/ paprika/oregano and salt/pepper. Coat with breadcrumb/flour, shredded parmesan cheese -saute in pressure cooker 2 minutes on each side. Drain excess oil. Return chicken to pan, add sauce. Set pressure cooker on high setting 6 minutes. Allow pressure to release natuirally. Open sprinkle some extra cheese on chicken close lid for a minute the heat will melt cheese. I serve gnocchi or noodles (I sometimes include mushrooms, diced onion and chopped green pepper that i have sauteed to the sauce)
