  • 1 lb shrimp (22 medium/large shrimp; peeled and deveined)
  • 1 Tbsp extra-virgin olive oil
  • 1 cup panko (Japanese breadcrumbs)
  • 1 cup sweetened shredded coconut
  • ½ cup all-purpose flour (plain flour)
  • 1 tsp paprika
  • 2 large eggs (50 g each w/o shell)

  • 3 sprigs cilantro (coriander) (optional)
