Buffalo Shrimp Tacos

Ingredients
  • 1 lb shrimp (about 25, deveined n peeled
  • 1avocado
  • 1 lime
  • ⅛ tsp salt
  • 1 ¼ c flour
  • ¼ c cornstarch
  • 1 tsp salt
  • ¼ cup Frank's red hot
  • 2 tbsp butter
  • 2c Coleslaw veggies
  • ¼ c Blue cheese dressing
  • 4 tortillas
Steps
  1. In small bowl, mash up avocado. Squeeze 1 lime wedge over avocado and add ⅛ tsp salt. Mix all together. Set aside
  2. Mix Cole slaw veggies n blue cheese together. Set aside
  3. Mix together flour, cornstarch and salt. Rinse shrimp. Dregde in flour mix, shake off excess flour and place on wire rack to help dry shrimp n set the coat.
  4. Heat oil in heavy bottom pan. When hot, add shrimp and cook until golden brown. 3 to 4 minutes each side.
  5. While shrimp is cooking, warm tortillas.
  6. Melt butter n mix with red hot sauce in bowl. Toss shrimp in sauce.
  7. Spread avo mash on tortillas, add shrimp top w coleslaw. Enjoy.
