Soup—Healthy Potato Soup Mediterranean
Similar to ours, but different spices
Ingredients
  • subheading: Sauté 5 to 7 minutes:
  • 2 tablespoons extra virgin olive oil
  • 1 medium yellow onion, chopped
  • 1 carrot, peeled and chopped
  • 2 celery sticks, peeled and chopped
  • 2 large garlic cloves, minced
  • 1 ½ pounds yellow gold potatoes, peeled and cubed into ½-inch cubes
  • Kosher salt
  • black pepper
  • 1 teaspoon ground cumin
  • ½ teaspoon paprika
  • ¼ teaspoon turmeric
  • subheading: Add and simmer 20 to 30 minutes until potatoes are soft:
  • 4 cups vegetable broth
  • subheading: Add:
  • 1 cup milk
  • subheading: Blend with immersion blender until smooth:
  • subheading: Top with:
  • ½ cup chopped fresh parsley
  • 1 to 2 green onions, trimmed and chopped (both white and green parts)
