Mom's Cinnamon Rolls

Ingredients
  • subheading: For Bread:
  • 1¾ cup Water
  • ¾ cup Granulated Sugar
  • 1 Tbsp Salt
  • ½ cup Shortening
  • 2 Eggs, beaten
  • 6½ cups Flour (or enough to make a stiff dough)
  • 1 package (2¼ tsp) Yeast activated in ¼ cup lukewarm water

  • 1 to 2 Sticks Butter, melted
  • 3 to 5 cups Brown Sugar
  • 3 to 6 Tbsp Cinnamon
  •  
  • subheading: For Icing:
  • 3 cups Powdered Sugar
  • ⅓ cup Milk
  • ½ cup Butter, softened
  • 1 tsp Vanilla Extract
Steps
  1. subheading: Making the Dough:
  2. Activate yeast in ¼ cup of lukewarm water
  3. Mix together sugar, salt, shortening and eggs. Add water and activated yeast mixture and mix until combined.
  4. Add flour a cup at a time using a bread hook to combine or kneading by hand if you do not have a mixer. Keep adding flour until your dough is easy to handle and pulls away from the sides of the bowl. This may take more or less flour than the recipe calls for.
  5. Flour a clean work surface and kneed dough by hand until it is smooth and elastic.
  6. Put in a well greased bowl, cover with a damp cloth, and let rise for 3 hours.
  7. Punch down dough and let rise for an additional 4 hours or cover tightly with cling wrap and place in fridge over night.
  8. subheading: Assembling the Cinnamon Rolls:
  9. Working with half the dough at a time, roll out into a rectangle about ⅛ to ¼ inch thick then brush with melted butter. Cover generously with brown sugar and cinnamon.
  10. Using a pizza cutter, cut into 1 to 2 inch strips then roll up the strips. Pinch the outer edge of the roll into the bun so it does not come unrolled.
  11. Place finished rolls into well greased baking pan then cover with a light cloth and let rise for at least 1 hour.
  12. Bake at 350° for 20 to 25 min or until just turning golden brown.
  13. subheading: Icing:
  14. Mix together ingredients adding more milk or powdered sugar as needed to get desired consistency.
  15. Allow the Cinnamon rolls to cool for at least 10 minutes then ice.
