  • 3 POBLANO PEPPERS LARGE; STEMS AND SEEDS REMOVED
  • 2 to 3 TABLESPOONS OLIVE OIL
  • 1 POUND RUSSET POTATOES PEELED AND DICED
  • CORN TORTILLA CHIPS
  • 2 CUPS MONTEREY JACK CHEESE SHREDDED
  • SLICED AVOCADO
