Ingredients
- 2 lbs ground beef
- 1 lb ground pork
- ½ bag of hot and spicy pork rinds
- 1 cup shredded parmesan (or less if you like, all the carbs come from here really)
- 2 eggs
- garlic powder
- onion powder
- sea salt
- pepper
Steps
- Get a glass casserole dish and put some foil in it for easy clean up.
- Mix all the ingredients up, crushing the pork rinds as you go (you might want to wear rubber gloves).
- Form into generous-sized meatballs. I got three rows of five meatballs almost perfectly fitting the dish.
- Bake at 350 to 375 for 45 mins or so (internal needs to be about 160 F).
- These are easy to bag up and freeze for the future. I make three meatballs per serving so I get five meals out of it. Each meal containing about 3 g of carbs (almost all from the parmesan). Top with a touch of sauce (or not) and maybe some mozzarella cheese. Yum!
