That's a Spicy Ketoball!
Ingredients
  • 2 lbs ground beef
  • 1 lb ground pork
  • ½ bag of hot and spicy pork rinds
  • 1 cup shredded parmesan (or less if you like, all the carbs come from here really)
  • 2 eggs
  • garlic powder
  • onion powder
  • sea salt
  • pepper
Steps
  1. Get a glass casserole dish and put some foil in it for easy clean up.
  2. Mix all the ingredients up, crushing the pork rinds as you go (you might want to wear rubber gloves).
  3. Form into generous-sized meatballs. I got three rows of five meatballs almost perfectly fitting the dish.
  4. Bake at 350 to 375 for 45 mins or so (internal needs to be about 160 F).
  5. These are easy to bag up and freeze for the future. I make three meatballs per serving so I get five meals out of it. Each meal containing about 3 g of carbs (almost all from the parmesan). Top with a touch of sauce (or not) and maybe some mozzarella cheese. Yum!
