Summer Pasta with Yellow Squash and Sun Dried Tomatoes
Ingredients
  • 16 ounces dried spaghetti or angel hair pasta
  • 2 tablespoons olive oil
  • 1 pound yellow summer squash sliced
  • ⅔ cup jarred sun dried tomatoes drained and chopped
  • 3 cloves garlic minced
  • ½ teaspoon red pepper flakes
  • 1 teaspoon salt
  • 1 ½ teaspoon Italian seasoning or ½ teaspoon each dried oregano, basil, and thyme
  • ½ cup grated Parmesan* cheese
