One-Pot Gluten-Free Vegan Lasagna
Ingredients

  • 1 onion
  • 2 garlic cloves
  • Salt

  • 1 to 2 tbsp tomato paste
  • A pinch of yellow curry
  • Chili flakes
  • 1 can crushed tomatoes
  • ½ tsp tamari
  • Gluten-free lasagna sheets (as many as you need. I used organic corn and rice lasagna sheets)
  • A big bunch of fresh spinach
  • 1 can cooked, rinsed green lentils
  • A splash of water for the tomato sauce
  • Around ½ cup cashew cream (recipe below)
  •  
  • Cashew cream around 1 cup
  • ½ cup soaked (4 hours)/cooked (5 to 10 min) cashews
  • ½ cup water
  • Salt
  • Black pepper

  • Hemp seeds
  • Fresh basil
  • Nutritional yeast
