Potatoes O’Brien is such a versatile side dish—it can be served with just about any protein to make a satisfying meal. Steak and eggs with potatoes O’Brien is a hearty grand slam of a morning meal. Ingredients
  • 2 tablespoons avocado oil or other neutral oil
  • 2 large ( 1 ½ pounds) russet potatoes, scrubbed clean and diced
  • ½ red bell pepper, diced
  • ½ green bell pepper, diced
  • ½ medium yellow onion, diced
  • ½ teaspoon seasoned salt, such as  Lawry’s
  • ⅛ teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper, optional
  • Salt, to taste
