Molasses-Spice Cookies

Ingredients
  • 1 cup butter, softened
  • 1 cup brown sugar, packed
  • ¼ cup dark molasses
  • 2 tsp. ground ginger
  • 2 tsp. cinnamon
  • 2 tsp. cocoa powder
  • ½ tsp. ground cloves
  • ½ tsp. allspice
  • 1 tsp. baking powder
  • ½ tsp. baking soda
  • ¼ tsp. salt
  • 2 large eggs
  • 2 tsp. vanilla extract
  • 2¾ cups flour
Steps
  1. Beat butter until creamy.
  2. Add sugar, molasses, spices, baking powder, baking soda, and salt.
  3. Beat until fluffy.
  4. Beat in eggs and vanilla until blended.
  5. Slowly beat in flour.
  6. Cover and refrigerate at least 45 minutes.
  7. Preheat oven to 375° with 1 rack in the middle.
  8. Spray cookie sheets.
  9. For each cookie, shape scant ¼ cup dough into ball and roll in granulated sugar.
  10. Place on cookie sheet and flatten to 2½" rounds.
  11. Sprinkle with more sugar.
  12. Bake, 1 sheet at a time, for 10 to 12 minutes.
