Raspberry Cheesecake Cookies (Subway Copycat Recipe)

I am a retiree who loves to search out recipes. I am a mom to 3 amazing kids and grandma to 5 beautiful grandkids who are nearly all adults now, 3 in college and 2 in high school. I dont cook as much as I use to because I have mobility issues but I love finding recipies that I would love to try and some I do. I hope whoever is reading this enjoys the recipes I've collected.

8 tablespoons butter ½ cup

½ cup granulated white sugar

½ cup light brown sugar

2 teaspoons vanilla extract

1 large egg room temp

1 ½ cups all-purpose flour

1 teaspoon baking soda

4 tablespoons Cheesecake Instant Pudding Mixture (we do not recommend sugar free)

¼ teaspoon salt

¼ cups white chocolate chips

½ cup freeze dried raspberries plus more for tops of the cookies
