Apple Cinnamon Pecan Baked Oatmeal
Ingredients
  • 2½ C (200g) old-fashioned rolled oats (750 cal, 25g protein)
  • 1 tsp baking powder
  • 2½ tsp cinnamon, divided (16 cal)
  • ¼ tsp nutmeg
  • ½ tsp salt
  • 6 TBSP egg whites (50 cal, 10g protein)
  • 1 (11.5 fl oz) vanilla protein shake (150 cal, 0g added sugars, 30g protein for Fairlife Nutrition Plan)
  • ¾ C water
  • ¼ C granulated sweetener, equivalent to ½ C sugar (use the conversion chart on your pkg)
  • 3 to 5 drops crème brulée or butter toffee drops (stevia or monk fruit), optional
  • 1½ tsp vanilla extract (19 cal)
  • 2 TBSP coconut oil, plus more for greasing the dish
  • 2 medium (3" dia) (182 g each) sweet-tart apples (Honeycrisp or Gala) cored and diced (190 cal, 1g protein)
  • 12 pecan halves (10 cal per 1.5g pecans (two halves)) (60 cal)
  • Sliced apples, for garnish, optional, adding appropriate nutrition
  • Adjust nutrition to ingredients used
  • Recipe total about 1235 counted cal, 0g added sugars, 66g protein
