Instant Pot Top Sirloin Steak with Gravy
Ingredients
  • 1.5 lbs. Top Sirloin Steak, sliced into 4 pieces.
  • (Note: This cut of steak is not the regular tender sirloin steak. Top sirloin steak is a tougher cut of steak that is good for slow cooking, braising or cooking in Instant pot like what I did. Beef chuck will be my other choice for this method of cooking).
  •  
  • 2 tbsp all purpose flour, ¼ tsp salt, ¼ tsp ground pepper
  •  
  • 2 tbsp unsalted butter
  •  
  • 2 tbsp olive oil
  •  
  • 8 oz. white button mushrooms, sliced
  •  
  • 2 cloves garlic, peeled and chopped
  •  
  • ¼ tsp red pepper flakes
  •  
  • 1 cup low sodium beef broth
  •  
  • 1 packet Knorr Au jus
  •  
  • ½ packet of Lipton's Recipe Secret Onion flavor
  •  
  • 2 tsp dijon mustard
  •  
  • ¼ cup heavy cream
  •  
Steps
  1. Mix all purpose flour, salt and ground pepper in a shallow plate. Dredge or coat the steak all over, shake off excess flour. Set aside.
  2. In a small measuring cup or a bowl, whisk and combine 1 cup low sodium beef broth, 1 packet Knorr Au jus, ½ packet Lipton's Recipe Secret Onion Flavor and 2 tsp Dijon mustard. Set aside.
  3. Press Saute setting of Instant Pot. When hot, put 2 tbsp butter and 2 tbsp olive oil, add sliced mushrooms, saute until lightly browned. Take mushrooms out of the pot, set aside. Place steak pieces in one layer, cook for 4 minutes per side or until caramelized on both sides. Add garlic and red pepper flakes, cook for 2 minutes. Turn off IP.
  4. Pour in the mixture of beef broth, Au jus, onion flavor and dijon mustard that you set aside, stir, deglaze pot by scraping the bottom of pot to release bits and pieces sticking at the bottom of pot.
  5. Close lid, turn valve to sealing. Press Manual setting for 40 minutes, NPR 15 minutes. Turn valve to venting to release all pressure. When the pin drops, open lid.
  6. Press saute setting. Pour in ¼ cup heavy cream and add in cooked mushrooms back in the pot, stir gently until it thickens a bit. Turn IP off. Serve with mashed potatoes and/or any of your favorite sides.
