Pippa Middlehurst Miso Corn Chowder
Ingredients
  • 6 corn cobs
  • 2 tbsp vegetable, sunflower or groundnut oil
  • 2 tbsp salted butter
  • 1 leek, finely sliced
  • 3 shallots, finely sliced
  • 1 garlic clove, grated
  • 500ml/18fl oz unsweetened oat milk
  • 4 tbsp white miso paste
  • 750g/1lb 10oz potatoes, peeled and cut into 5cm/2in pieces (or whole peeled baby potatoes)
  • 1 small bunch fresh coriander
  • 1 small bunch fresh mint
  • 1 small bunch fresh Thai basil or regular basil
  • 1 large red chilli, deseeded and finely chopped
  • 3 spring onions, finely chopped
  • 2 tsp toasted sesame oil
  • sea salt and freshly ground black pepper
