Chicken and Chard Dumpling Soup
Chewy gnocchi swim alongside pieces of tender, poached chicken and verdant Swiss chard, which brings balance to the bowl. A parmesan rind in the soup and cheese on top ensure that there is umami flavor in every bite, while a squeeze of lemon brings welcome brightness. Skip the chicken to make it a satisfying and nourishing vegetarian soup. Shopping tip: As the name implies, cauliflower gnocchi is made from cauliflower rather than the traditional potatoes. Of course, standard potato gnocchi will work well in this dish. Note that cauliflower gnocchi are not a gluten-free substitute for traditional gnocchi as it contains wheat.
Ingredients
  • 2 tablespoons olive oil, divided
  • 1 10-oz. pkg. frozen cauliflower gnocchi
  • 1 yellow onion, chopped
  • 1¼ teaspoons kosher salt, divided
  • 2 cloves garlic, finely chopped
  • 1 pound frozen boneless, skinless chicken breasts
  • 1 10-oz. pkg. frozen cut Swiss chard, spinach, or other leafy green
  • 1 strip lemon zest, plus lemon wedges for serving
  • 1 2-to-3-in. Parmesan cheese rind, plus grated cheese for serving
  • 1 dried bay leaf
  • Freshly ground black pepper
