  • 1 tablespoon ( 13 g) granulated sugar
  • 2 ¼ teaspoons ( 7 g)  instant yeast
  • 1 teaspoon ( 3 g) kosher salt
  • ½ cup whole wheat flour (2 ½ ounces; 70 g)
  • 2 cups all-purpose flour (10 ounces; 280 g), plus more for dusting
