Instant Pot Black Bean Soup

Ingredients
- 1 onion, diced
- 3 bell peppers, diced
- 1 can diced tomatoes (14.5oz)
- 6 to 8 cups veggie broth
- ½ tsp pepper
- 1 tsp salt
- 1 TBSP paprika
- 1 lb dry black beans, rinsed
- 2 TBSP chili powder
- 2 TBSP cumin
- 2 bay leaves
Steps
- Add all ingredients to Instant Pot and place the lid on top. make sure vent is set to "sealing"
- Cook soup on manual high pressure for 40 min let pressure naturally release (soup takes a while to come to pressure cook time will be more than 1 hour)
- After the pot has depressurized, remove the lid and carefully remove the bay leaves. the soup will thicken as it sits. you can also blend ½ of the soup to thicken it more.
- top with any desired toppings. goes well over cilantro lime rice
Notes
- Use only 6 cups of broth
- Serve with sour cream and homemade croutons
