Instant Pot Black Bean Soup
Ingredients
  • 1 onion, diced
  • 3 bell peppers, diced
  • 1 can diced tomatoes (14.5oz)
  • 6 to 8 cups veggie broth
  • ½ tsp pepper
  • 1 tsp salt
  • 1 TBSP paprika
  • 1 lb dry black beans, rinsed
  • 2 TBSP chili powder
  • 2 TBSP cumin
  • 2 bay leaves
Steps
  1. Add all ingredients to Instant Pot and place the lid on top. make sure vent is set to "sealing"
  2. Cook soup on manual high pressure for 40 min let pressure naturally release (soup takes a while to come to pressure cook time will be more than 1 hour)
  3. After the pot has depressurized, remove the lid and carefully remove the bay leaves. the soup will thicken as it sits. you can also blend ½ of the soup to thicken it more.
  4. top with any desired toppings. goes well over cilantro lime rice
Notes
  • Use only 6 cups of broth
  • Serve with sour cream and homemade croutons
