PAT’S APPLE AND BLUEBERRY MUFFINS
2 SPs each   (That was the flour)

Ingredients
  • 160 to 180 gms homemade apple sauce
  • 160 gms Self Raising Flour
  • ½ teaspoon baking powder
  • 3 Dessert Spoons granulated sweetener (I used Splendid)
  • 100 gms Total 0% Greek yogurt
  • 50 mls milk BOB or Skimmed
  • 2 large eggs
  • ½ teaspoon vanilla extract
  • Blueberries fresh or frozen ( I used 32 fresh blueberries )
Steps
  1. Make the homemade apple sauce by peeling, coring and chopping into small pieces 1 cooking apple mine then weighed 167 gm add 3 dessert spoons of cold water, cook in the microwave for 4 minutes and mash well with a fork  make this first and leave to chill.
  2. Add the baking powder and granulated sweetener to the flour stir through with a fork, whisk the eggs and combine with the yogurt when smooth add in the apple sauce and milk and mix well. Add to the flour mix. Share between 8 large cupcake cases you can either add the blueberries to the mixture or push in the top of each case before baking which is what do.
  3. Bake in the centre of the oven at 190 degrees for 15 to 20 minutes next time I would spray a silicone muffin tray as they stuck to the cases.
