Servings: ½ cup pesto
Ingredients
  • 1 cup raw cashews
  • 1 to 3 teaspoons minced garlic
  • 2 cups fresh basil, loosely packed (this could be replaced with arugula)
  • 4 tablespoons nutritional yeast
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • 3 to 4 tablespoons extra virgin olive oil
Steps
  1. Add all ingredients except oil to a food processor and blend.
  2. Add oil as needed until you reach the desired texture.
