Thai Green Curry Meatballs
Ingredients

  • 1 tablespoon Thai green curry paste

  • ½ cup chopped cilantro
  • 1 ½ teaspoons salt
  • 2 cloves garlic, finely minced
  • 3 green onions, white and green parts finely chopped
  • 2 tablespoons coconut oil (plus more if needed; can substitute canola or vegetable oil)

  • 2 cans (13.5-ounce each) unsweetened coconut milk
  • 3 tablespoons green curry paste
  • ¼ cup lime juice (from about 2 to 3 limes)
  • Hot cooked rice for serving
