Pasta, Soup Provide Double Comfort
Ingredients
  • subheading: For basic broth:
  • 1 medium onion, trimmed, split, peeled, and thin-sliced
  • 2 medium carrots, peeled and sliced
  • 1 large rib celery, including leafy top, washed and sliced
  • 3 pounds bone-in chicken parts, meaty beef bones, or a combination of chicken, beef, and even pork bones
  • 1 large sprig parsley
  • ½ teaspoon whole black peppercorns
  • 3½ quarts water
  • Salt
  • subheading: Optional additions:
  • 2 to 3 quarter-sized slices gingerroot
  • 1 small tomato, halved and seeded or 1 tablespoon tomato paste
  • 2 to 3 sprigs herbs such as thyme, sage, or oregano
  • 1 medium leek, split lengthwise and washed to remove sand from between layers, sliced
  • 2 to 3 cloves garlic, lightly bruised and peeled but left whole
  • 1 stalk fennel, including feathery fronds, washed and cut into 2 to 3 pieces
  • ¼ red, yellow, or orange sweet bell pepper, stemmed and seeded
