  • 350g of salmon , skinned and cut into two equal portions
  • 2 tbsp of olive oil
  • 4 anchovies , roughly chopped, with some oil from the jar
  • 2 garlic cloves , sliced
  • ½ red chilli , finely chopped
  • 100ml of dry white wine
  • 500g of cherry tomatoes
  • 80g of olives, a mixture of black and green
  • 30g of capers , rinsed
  • 1 handful of parsley , chopped
  • 1 handful of pine nuts , toasted
  • lemon zest
  • salt
  • pepper
